<li>1 cup	  chicken breast, cooked</li>
<li>1/4 cup	  Wondra flour</li>
<li>2 cups	  milk, fat free</li>
<li>1 cup	  cheese, shredded</li>
<li>1/2 tsp	  salt</li>
<li>1/4 tsp	  pepper</li>
<li>1/4 cup	  parsley, fresh</li>

<li>In a non stick pan, cook the onion, celery and peppers until soft, adding a little water if needed. Chop the chicken and add it to the pan</li>
<li>In a separate pot, stir together the Wondra flour and cold milk.</li>
<li>Place over medium heat, cook and stir until thickened.</li>
<li>Remove from the heat and add the cheese. Cover and allow to sit without stirring, for 5 minutes, or until the cheese is melted.</li>
<li>Stir in the salt, pepper and the chicken mixture</li>

<h3>Pinto Bean Chili Recipe</h3>

<p>(Makes 12 servings)</p>
<ul>
<li>8 oz	  pinto beans (when dry)</li>
<li>43 oz	  diced tomatoes ( 3 14.5 oz cans)</li>
<li>2 large	  green bell pepper</li>
<li>1 tbsp	  olive oil</li>
<li>4 cups	  onion, chopped</li>
<li>3 cloves	  garlic, minced</li>
<li>1/4 cup	  chopped parsley</li>
<li>1 lb	  ground beef</li>
<li>1/4 cup	  chili powder</li>
<li>4 tsp	  salt</li>
<li>1 tsp	  ground black pepper</li>
<li>1 tsp	  cumin</li>
</ul>

<ol>
<li>Let beans stand in water over night. Drain.</li>
<li>Place beans in big pot and add water to cover.</li>
<li>Bring to a boil, reduce heat and cover and simmer for about 45 minutes or until beans are tender (skins should burst when you blow on them).</li>
<li>Add tomatoes and simmer for 5 minutes.</li>
<li>Set beans aside.</li>
<li>In a skillet add vegetable oil and saute onions and bell pepper until soft.</li>
<li>Add garlic and chopped parsley.</li>
<li>In another skillet brown ground beef lightly. Drain.</li>
<li>Add to onion mixture.</li>
<li>Add chili powder and cook for 10 minutes.</li>
<li>Add beef mixture to beans and stir in pepper, cumin, and salt to taste.</li>
<li>Cover and simmer for 1 hour.</li>
<li>Remove cover and continue to cook for 30 minutes.</li>

<li>1  Cooking spray</li>
<li>4  garlic cloves, minced and divided</li>
<li>1/2 teaspoon	  salt, divided</li>
<li>1/4 teaspoon	  freshly ground black pepper, divided</li>
<li>1/2 c.	  tomatoes, sun-dried packed without oil, diced (about 5)</li>
<li>10 oz.	  chopped spinach, frozen, thawed, drained, and squeezed drained</li>
<li>1/4 cup	  (1 ounce) feta cheese, crumbled</li>
<li>3 t.	  cream cheese (low-fat or non-fat)</li>
<li>1/2 teaspoon grated rind from a lemon</li>
<li>16 oz.	  pork, loin, boneless (4 boneless pork chops)</li>
<li>2 tablespoons	  fresh lemon juice</li>
<li>2 teaspoons	  Dijon mustard</li>
<li>1/4 teaspoon	  dried oregano</li>
</ul>

<li>Preheat broiler.</li>
<li>Heat a large nonstick skillet over medium-high heat.</li>
<li>Coat pan with cooking spray.</li>
<li>Add 2 garlic cloves; sauté 1 minute.</li>
<li>Add 1/4 teaspoon salt, 1/8 teaspoon pepper, tomatoes, and spinach; sauté until moisture evaporates.</li>
<li>Remove from heat; stir in cheeses and rind.</li>
<li>Cut a horizontal slit through thickest portion of each pork chop to form a pocket.</li>
<li>Stuff about 1/4 cup spinach mixture into each pocket.</li>
<li>Sprinkle remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper over pork.</li>
<li>Arrange pork on the rack of a broiler pan or roasting pan coated with cooking spray; place rack in pan.</li>
<li>Combine remaining 2 garlic cloves, juice, mustard, and oregano in a bowl; stir well.</li>
<li>Brush half of mustard mixture over pork.</li>
<li>Broil 6 minutes; turn pork.</li>
<li>Brush remaining mixture over pork; broil 2 minutes or until done.</li>

<li>2 medium	  tomatoes, seeded and chopped (about 2 cups)</li>
<li>1/4 cup	  shredded fresh basil or 1 tablespoon dried basil</li>
<li>1 tablespoon	  balsamic vinegar or red wine vinegar</li>
<li>1/2 teaspoon	  salt</li>
<li>1/2 teaspoon	  freshly ground black pepper</li>
<li>20 ounce	  tuna steaks</li>
<li>8  black olives (optional)</li>
</ul>

<li>1. In a small bowl, combine tomatoes, basil, vinegar, salt, and pepper.</li>
<li>Mix well and set aside.</li>
<li>Heat a charcoal grill until coals form white ash, or preheat a gas grill to medium. Place tuna on grill rack. Grill 4 inches from heat, turning once, about 6-8 minutes, until fish just turns opaque but is still slightly pink in the center.</li>
<li>Place tuna on serving plates. Spoon tomato mixture evenly over tuna.</li>
<li>Divide olives among plates. Serve immediately.</li>

<li>1/2  banana, sliced</li>
<li>6 oz	  skim milk</li>
<li>1 tsp	  vanilla extract</li>
<li>1 tsp	  cinnamon</li>
<li>1/3 cup	  ice, crushed</li>
</ul>

<li>Gather ingredients.</li>
<li>Place half banana (now chopped and frozen) into blender. Add 1/3 cup ice, 6 ounces of skim milk and 1 teaspoon of vanilla extract. Blend until smooth.</li>
<li>(Optional: Add 1 packet of Splenda for extra sweetness)</li>
<li>Pour mix into tall glass. Sprinkle about 1 teaspoon of ground cinnamon on shake.</li>
