Lean Pork Loin Stuffed with Feta and Spinach

Lean Pork Loin Stuffed with Feta and Spinach

(Makes 4 servings)

  • 1 Cooking spray
  • 4 garlic cloves, minced and divided
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon freshly ground black pepper, divided
  • 1/2 c. tomatoes, sun-dried packed without oil, diced (about 5)
  • 10 oz. chopped spinach, frozen, thawed, drained, and squeezed drained
  • 1/4 cup (1 ounce) feta cheese, crumbled
  • 3 t. cream cheese (low-fat or non-fat)
  • 1/2 teaspoon grated rind from a lemon
  • 16 oz. pork, loin, boneless (4 boneless pork chops)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon dried oregano

  1. Preheat broiler.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Coat pan with cooking spray.
  4. Add 2 garlic cloves; sauté 1 minute.
  5. Add 1/4 teaspoon salt, 1/8 teaspoon pepper, tomatoes, and spinach; sauté until moisture evaporates.
  6. Remove from heat; stir in cheeses and rind.
  7. Cut a horizontal slit through thickest portion of each pork chop to form a pocket.
  8. Stuff about 1/4 cup spinach mixture into each pocket.
  9. Sprinkle remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper over pork.
  10. Arrange pork on the rack of a broiler pan or roasting pan coated with cooking spray; place rack in pan.
  11. Combine remaining 2 garlic cloves, juice, mustard, and oregano in a bowl; stir well.
  12. Brush half of mustard mixture over pork.
  13. Broil 6 minutes; turn pork.
  14. Brush remaining mixture over pork; broil 2 minutes or until done.
