Pumpkin Chiffon Pie

Pumpkin Chiffon Pie

Filling:

  • 1 package Medifast Chai Latte
  • 1 1/2 Tablespoon dry Jello Sugar-Free Vanilla Cook and Serve Pudding
  • 1 teaspoon Knox Unflavored Gelatin
  • 3 oz. Hot water
  • 3 oz. Cold water
  • 2 ice cubes

Crust:

  • 1 package Medifast Multi Grain Crackers

  1. Combine Chai Latte and pudding in a small container.
  2. Set aside.
  3. Stir gelatin in hot water.
  4. Let soften 3-4 minutes, then stir until clear.
  5. Add cold water and stir again.
  6. Process gelatin mixture, dry ingredients in blender until thoroughly combined.
  7. Add ice cubes one at time until mixture begins to thicken.
  8. Pour into bowl.
  9. Refrigerate until set, about 2 hours.
  10. Crush Medifast Multi Grain Crackers and place in bottom of a bowl.
  11. Once the filling is set, spoon over the crust.
